Lemon Rice

  • Lemon Rice Serves – 3 Recipe # – 001
Ingredients
Raw Rice – 1 Cup (approx.. 250 gm)
Lemon Juice – Juice of One big size lemon
Salt – To taste
Green Chilli – 3 nos.
Ginger – 1” piece
Mustard Seeds – 1 Tsp.
Peanut – 2 Tbls
Black Gram Dal (Urad Dal) – 1 Tbls
Bengal Gram – 1 Tbls
Asafoetida – ¼ Tsp
Turmeric Powder – ¼ Tsp
Curry Leaves – Few
Coriander Leaves – one small bunch
Oil – 2 Tbls
Cashew Nuts – Few (Optional)
Method
In a Cooker take the rice with 2 cups of water, Cook it for 2 whistles, when the steam is released put the rice in a broad vessel and let it cool  so that the rice is not sticky.  Heat the oil in a pan or Kadai and add Urad dal, Bengal Gram Dal, Peanut & Mustard seeds when the mustard starts popping add curry leaves, ginger and Green chilli,  fry for few minutes then switch off the stove. Add Turmeric powder, Asafoetida and keep aside.  When the rice is ready pour the fried ingredients and squeeze juice of one lemon and salt, mix well and garnish with Chopped Coriander leaves, Cashew nuts and serve.
